If there is one dish/meal/dessert I have made recently, for Passover or any other day, that I say is a MUST try, it’s these muffins. I have been experimenting with Kosher for Passover ingredients here and there this week, I had hoped to post a lot more but my son was pretty under the weather, and the idea for these muffins just popped into my head this morning. I didn’t want to make cookies, I already tried a few different cakes, but Pesach muffins I have never tried!
My mother always says a REAL chef is someone who can make something from scratch, without following a recipe or someone’s directed measurements. When it comes to baking, I often take tips from a few different recipes to create something yummy, this time I just created a recipe as I went along, and the results were Pesach-licious and amazing. My husband said, ” No way are these kosher for Pesach”, so..mission accomplished. These muffins will be so fun to play with, adding different fruits and nuts, please try this recipes and let me know what other delicious treats you add to them!
You will need:
2 1/2 cups almond meal
1 cup chopped walnuts
1/2 cup sugar
2 tbs melted kosher for Passover margarine
2 eggs
1/2 tsp kosher for Passover baking powder
1/2 cup potato starch
1/4 cup dried cherries 9 (cranberries would be good too!)
Preheat oven to 350 degrees. Spray muffin cups with kosher for Passover cooking spray.
Combine almond meal, walnuts and sugar in a large bowl. Add melted margarine and eggs, stir until doughy. Add baking powder and potato starch, stir until the white of the potato starch is blended in and no longer visible, then add cherries and mix again.
Fill muffin comes about half way with batter, bake for 26 minutes or until a toothpick inserted in the middle comes out clean.
I brought these muffins to my in-laws for Shabbos dessert this week, and it’s not even Pesach yet! What does that tell you? 😉
