I am in the midst of cooking up a storm, but I had to take a minute to post this because a number of people asked for the recipe. I usually love, and prefer, to bake with fresh fruit, but sometimes using canned is a huge time & energy saver! So once in a while, if I have to use canned, so be it!

You will need:

1 Tbs cornstarch

1 Tbs cold water

1 can cherry pie filling

1 frozen pie shell ( 9 inches)

Topping:

1/3 cup all purpose flour

1/3 cup quick cooking oats

1 Tbs granulated sugar

1 heaping Tbs brown packed sugar

3 Tbs cold butter or margarine

In a small bowl, combine cornstarch and water until smooth. Add cherry filling and stir. Pour into pie crust.

For topping: Combine flour, oats and sugar in a small bowl. Sprinkle filling over filling. Cut butter until crumbly and sprinkle over topping. Bake at 375 degrees for 40 minutes, or until filling is bubbling and topping is browned. Cool on a wire rack, and refrigerate until chilled.

Yields: 6-8 servings
